I woke up about 8AM and could not get back to sleep. I will work for as long as I can and then maybe catch a nap.
So, I've checked on the dehydrator. The French style green beans are dehydrated. So is the chopped broccoli. Oddly enough the potatoes are really close. I would have taken longer, but they are cut small, maybe up to 1/2 inch cubes. The broccoli florets still need hours in the dehydrator. I'm pretty pleased with the results because I only set the dehydrator on 115 degrees.
I don't know if you are aware of this, but heat is hard on nutrients. Nevertheless, my machine tells me I should dehydrate veggies at 135 degrees. Well, they'll dehydrate just as well at 115, just more slowly. So, the progress made is pretty good.
I've checked the seals on the meats I pulled out of the canner last night and every jar is properly sealed. All the jars have been scrubbed clean. Next up, I need to label all the jars and stash them.
I have the dishwasher loaded and running. It's full of things I've used in canning as well as things I've used with whatever bit of food I've consumed.
Coming attractions: I need to haul 2 big bags of smelly trash to the outside bins. I have at least 3 trips worth to take care of. I have about 4 pounds of sausage to can and one additional jar of pork. I have boiled the chicken drumsticks. Next I need to remove the bones and refrigerate the meat. I have some broth from that for which I have plans. Before the freezer quit I'd planned to make some veggie soup this week which uses chicken broth and tomatoes as a base. I can use what I created from boiling the chicken legs. I have a large package (6.5 pounds) of bone in, skin on chicken thighs in the fridge, thawing and I should be able to can those today as well. I have spent a couple of hours, between last night and this morning, watching "how to can butter" videos on Youtube. I believe I've watched videos from 6 different creators. Each of them uses a slightly different method. They are all labor intensive so not something one attempts unless one is full of p & v. I don't think "full of p & v" describes me this AM...........Maybe sometime today I can tackle roasting those two little chickens...........Then we'll see what's left..........
